I asked the other day on Instagram what people wanted to see more of on my blog, I’ve been a bit rubbish at posting recently and really want to get back to sharing more. The most popular response by far was for more family meal plans.
So here’s what we’re eating this week!
As usual I’ll be shopping at Aldi and making swaps to cheaper alternatives where possible to shop within my budget of £40 a week.
The weather here’s been warmer recently so I’m optimistically planning lighter meals to match what the kids’ appetites have been like. I’m planning meals for the week however I’m not planning which day we will eat them on. I tend to go off best before dates on the ingredients to see which order we will eat the meals in, avoiding waste and the need for extra little top up shops.
Meal Plan
Breakfast
Harry and Megan tend to eat a lot in the mornings then their appetite decreases throughout the day. I find giving them a hot breakfast like porridge or egg on toast keeps them fuller for longer and reduces their constant grazing.
- Porridge with peanut butter and banana
- Cereal
- Overnight oats
- Pancakes
- Egg on toast
Lunch
Harry has packed lunches for school and I generally make the same for Megan on the days I’m home with her.
- Sandwiches
- Cheese and crackers
- Cheesy bean wraps
- Pasta salad
- Houmous and dippers
- Pesto pitta pockets
Dinner
I’m planning to try a few new recipes this week so fingers crossed the family like them! We have meatballs in the freezer that need using and am planning 2 vegetarian meals to save money.
- Meatball subs
- Chicken and chorizo jambalaya
- Salmon and pea pasta
- Tortilla pizza and sweet potato chips
- Chickpea and vegetable curry
- Chilli and rice tortilla bowls
- Grilled halloumi and Mediterranean quinoa
Snacks
- Smoothie ice pops
- Chocolate brioche rolls
- Fruit and yoghurt
- Veggie sticks
- Banana and raspberry oat bars
- Apple crisps
- 1 ingredient banana ice cream
