I am feeling so much better after getting back on plan this week! After a month of eating like a pig and avoiding the scales I gained 6.5lbs from my lowest Slimming World Weight. I was feeling down, ugly, and lethargic and something had to change. So I got back on it.

I’ve always been a big fan of feeding my children the healthiest food possible, with as little effort as possible. I love making my own baby and toddler snacks as it’s the best way to know what’s in them. However, as a mum of two children under 3 years old, I also love a shortcut! Harry is now at an age where he wants ‘treats’ and I am trying to teach him about having them in moderation. Last week was a bad weigh in for me. I gained 4lbs and was absolutely gutted. I’ll be honest, it really knocked me and I had a bit of a wobble about carrying on. I felt unmotivated and fed up. With Easter round the corner I just wanted to eat all the chocolate and forget about losing weight.

I’m back on it this week at Slimming World and feeling positive about losing the weight I gained last week. I’m still battling the sweet cravings though and am fighting against the urge to fall back on my old ways of, ‘if you can’t have sleep have sugar.’ Today I had terrible chocolate cravings but didn’t want to fall at the first hurdle. I decided to get creative and make some 1 syn cheesecakes instead. They were tasty, not quite a family sized bar of galaxy caramel but they definitely curbed the sweet cravings. They worked out at 1 syn each but the recipe makes 2… and I ate them both!

A while ago now, when I was pregnant with Megan I was asked if I would like to receive a copy of ‘The Gentle Eating Book’ by Sarah Ockwell-Smith to review. I jumped at the chance and was intrigued to see what ‘gentle eating’ was all about. I’ve heard of Sarah Ockwell-Smith’s other popular books like ‘The Gentle Sleep’ book and always liked the idea of taking a gentle approach but wasn’t sure it would work for us. With Harry we followed his lead when it came to eating but did controlled crying when it came to sleep. It worked for him and I’m a firm believer that some children do need a firm approach to some things.

For Valentine’s day in the past we have always been big fans of the Marks and Spencer’s meal deal. This year however, I am on Slimming World and slowly but surely I’m losing weight and getting healthier. This year I’ve decided to make a Slimming World friendly meal for Valentine’s day. I still wanted a dessert that tastes like a naughty treat and was really excited when I found out you can make 1 syn brownies! They taste as good as they look and you’d never guess they are so low in syns!

With Valentine’s day round the corner I decided to make a little treat for Harry. I adapted my carrot and lentil hearts recipe to give it a bit of a Valentine twist and these beetroot lentil hearts were the result. I love how the beetroot makes them a pretty pink colour and they tasted great too!

After an extravagant Christmas, 30th birthday and a tax return we are on strict rations until payday! Last week I didn’t stick to my meal plan and ended up spending way too much on food and still not quite having all the ingredients to make any one meal. I’m a firm believer that planning is the key to success so this week I’m back on it. We’re keeping it cheap but that doesn’t mean we won’t be eating delicious, healthy, on plan food.
