This recipe makes approximately 8 croquettes.
Ingredients
- 1 potato
- 1 tin of tuna
- 1 tbsp sweetcorn
- Breadcrumbs (1 slice of bread)
- 1 tsp unsalted butter
- A dash of whole milk
- Black pepper to taste
- Cooking spray
Method
- Peel and chop the potato, then boil until cooked.
- Drain the potato and mash until smooth.
- Stir in the butter, milk, tuna and sweetcorn.
- Shape the mixture into cylinders then roll in the breadcrumbs until well covered.
- Spray a baking tray with cooking spray. (We use sunflower oil fry light as it helps to make them lovely and golden on the outside.)
- Place the croquettes on the tray and spray lightly with more cooking spray.
- Cook in the oven at 180 degrees until golden (approximately 25-30mins)
- Serve with whatever you like! Harry likes his with cheesy beans!

what is the best way to reheat these?
I like to take them out of the freezer in the morning to defrost then pop them in the oven for a few minutes to reheat. You can use the microwave but it makes them go a little softer and they don’t hold their shape as well when picked up.
When i made these the mix didnt stick together well, what could I have been doing wrong? x

I’m not sure! Maybe try adding a little more milk and butter to your mashed potato to make the mix a bit wetter and stickier?

Hi, I’m sure breast milk would be fine or babies usual milk.
After 6 months of age whole milk or whichever alternative you choose can be used in food if you choose.
It’s only to make the mashed potato so you could even leave it out if you prefer.

Great idea! They are delicious! Might swap sweet corn for peppers next time, I wonder if the peppers need softening first or do they get softer cooking in the croquette?
