This recipe makes approximately 6 balls.
Ingredients:
- 1 sweet potato
- 1 egg
- 6x small cubes of cheddar cheese
- breadcrumbs (approx 2 slices of breads worth)
- A small knob of butter
- 1tbsp whole milk
- 1/2 tsp paprika
- Pinch of black pepper
- Cooking spray (we use fry light)
Method:
- Cut the sweet potato into cubes and boil until soft.
- Drain the potatoes and mash with the butter, milk, paprika and black pepper until smooth.
- Take a dessert spoonful of the mashed potato and mould into a round disc shape. Place a cube of cheese on top.
- Mould the potato around the cheese so it is hidden.
- Coat the ball in the egg and then roll in the breadcrumbs. Repeat this step to ensure it is well covered.
- Place the balls on a baking tray and spray well with cooking spray. We use sunflower oil fry light as it helps make the balls golden and crispy on the outside.
- Cook in the oven on 180° until the balls are golden in colour. (15-20 minutes)
- Enjoy! We serve ours with mixed vegetables. Let us know what your little one likes to eat these with!
Hi can these be frozen and baked when needed?
I have a test one in the freezer as I type! I will have a go at defrosting and reheating tomorrow and let you know how it goes!

How do u defrost? I don’t have a microwave:(
I took them out of the freezer in the morning and by tea time they had defrosted. I then just warmed them up in the oven x
Can I omit the cheese? Will the balls fall apart?
They would work fine without the cheese as it just melts in the middle, adding a little surprise. X

I added a bit of spinach for iron to the mash and used left over egg and breadcrumbs to make eggy bread for the morning. Left over cubes of cheese were my treat… yum x

So many great recipes and ideas all in one place. I could meal plan off this site alone (mind you I’ve never meal planned before!) . On another note where did youI get your hungry caterpillar table cloth. Hungry caterpillar mad here. I have hungry caterpilar material (bought several years ago in the hope of making something but hasn’t happened yet). Yours seems to be plastic coated perhaps so great for kids.

The table cloth was from Dunelm Mill and is a plasticy, wipe clean fabric. So handy for cleaning up easily!

If defrosted in morning and cooked later how long for and at what temperature?
I tend to just pop them in for 10 minutes at 180 degrees c x
Do you cook them before freezing or freeze straight away then cook when defrosted?
