On days when I can’t be bothered to cook, this slow cooker beef casserole is a great way to feed the family a healthy meal with minimal effort! It’s also a great meal for when I’m working. I can pop the ingredients in the slow cooker in the morning and come home to a meal ready and waiting for us to enjoy.
Ingredients
- 400g diced beef
- 2 large carrots
- 1 large swede
- 1 large parsnip
- 1 large onion
- 250ml boiling water
- 1 low salt beef stock cube
- 1 heaped tbsp tomato puree
- 1 tsp Worcester sauce
- 1 clove of garlic, crushed
- 1 tbsp flour
- 1 tsp mixed herbs
- A twist of black pepper
Method
- Put the beef in the slow cooker. Add the flour and black pepper and mix well so the flour evenly coats the meat.
- In a jug, mix the water, stock cube, tomato puree, Worcester sauce, garlic and herbs. Add to the slow cooker.
- Roughly chop the vegetables and add them to the slow cooker.
- Mix well, put the lid on and cook on low for 8 hours or high for 4 hours. I like to add a tea towel under the lid for the last two hours of cooking as it helps the sauce to thicken!
- Serve with mashed potato, dumplings or bread and butter! I like red cabbage with mine too. We didn’t have any today so Harry and I had gherkins instead.. Anything goes!
I tried this tonight and it was also a huge hit with my partner and wee boy. I only have a small slow cooker so didn’t quite follow the recipe quantities. Turned out lovely though. Definitely a super easy go to dish that I’ll make again.
