Homemade Chicken Nuggets

I've been wanting to make something like this for a while now, a healthy, baby friendly 'fast food' that I can batch cook and pop in the freezer for busy days.  I finally got round to doing it today and am so happy with how they turned out!  They are soft inside and crispy outside like shop bought chicken nuggets and taste delicious! I will definitely be making my own instead of buying ready made again. I love knowing what's in my food and these are perfect for young children as they have no hidden nasties, just good, healthy ingredients!

Chinese noodles

Quick and easy meal, perfect for using up bits in the cupboard! This recipe made enough for a hungry toddler and mummy for lunch.

Spaghetti and Meatballs

This is one of our favourite 'batch cooking' meals. It is healthy, tasty and so easy to make. Never again will you need to buy meatballs from the shop! These are tastier and much cheaper. I would definitely recommend making your own meatballs if you don't already!

Courgette pizza bites

After preparing our pizza topped chicken in the slow cooker for tea tonight (recipe coming soon) I had half a courgette and some cheese left over. I hate waste so decided to make some courgette pizza bites for Harry's lunch. He really enjoyed them and I hope your little ones do too!

Spinach and ricotta Cannelloni

I decided to have a switch around of our meal plan and move our tuna and pasta bake back to Wednesday, so today we had spinach and ricotta cannelloni. It was a bit of an experiment but turned out really well and will definitely be appearing on our weekly meal plans again.  Harry loved it and Alistair and I enjoyed it too!

Mini Veggie Omlettes

These little omlettes are quick and easy to make. They are extremely versatile and great for using up left over veggies! They are perfect for younger children to pick up and eat with ease!

Broccoli fritters

This recipe was created when I needed a quick, easy lunch for my son and we didn't have much in the cupboards. It was the day before we were going food shopping and I had a few bits left to use up. These healthy fritters went down really well with Harry and freeze well too! Win win!

Pea and Mint Fritters

Peas are one of Harry's favourite vegetables so he absolutely loves these! They are perfect for any younger babies who haven't grasped using their pincer grip yet but can be enjoyed by the whole family!

Turkey Burgers

These healthy, homemade burgers are quick and easy to make and delicious! Perfect for the whole family!
