Quick and easy lunch ideas

 

  • Sandwiches, Harry’s favourite fillings are: tuna and sweetcorn or cheese (I tend to grate and add grated cucumber, tomato, carrot and gherkins to make our own cheese savoury.  He loves it!)

  • Pasta and pesto. Obviously it is healthiest to make your own and there is an easy recipe here but, as a busy mum, we don’t always have the time!  Marks and Spencer’s pesto has the lowest salt I’ve found.

  • Eggy bread
  • Toast with your choice of topping. Cream cheese, avocado, houmous, banana, peanut butter, fruit pouches are all favourites in our house.
  • Baby Mezze. Pitta bread, olives (quartered), ham, feta cheese, tsatsiki and peppers.
  • Vegetable soup. Whatever vegetables you have left over at the end of the week can be quickly and easily blended into a delicious soup which can be kept in the fridge or freezer to get out as a speedy lunch.

  • Avocado and prawn salad.

  • Vegetable omelette, we add courgette, peppers,
    aubergine and cheddar cheese.

  • Tomato, mozzarella and chicken salad.
  • Tuna and cream cheese pasta, we add peas and sweetcorn too.

  • Pesto pitta pockets. Toasted pitta bread filled with mozzarella, pesto and tomato.
  • Tortilla pizza. Toast one side of the tortilla under the grill, turn over and cover with pasata, cheese and whatever toppings you like before popping under the grill again until the cheese is melted!  Ham and pineapple, tomato and peppers, chicken and sweetcorn are all delicious.  Pesto can also be used instead of pasata for a delicious twist!
