Pea and Mint Fritters

 

Pea and mint fritters

Ingredients:

1 cup frozen peas
1 egg
½ cup self raising flour
¼ spring onion, finely chopped
½ tbsp chopped mint
Feta cheese to taste (A finger sized slice is plenty)

Method:

  • Boil the peas for 4 minutes and drain.
  • Add the flour, eggs, spring onion and half the peas to a food processor and mix until smooth.
  • Fold in the rest of the peas, feta cheese and mint.
  • Shallow fry dessert spoonfuls of the mixture in oil for 2 minutes on each side until golden.
