Pancakes, pancakes, pancakes! This week’s meal plan

With pancake day coming up this week I thought I’d share with you my meal plan for the week ahead and some of my favourite, different pancake recipes!

After a fun family morning splashing in muddy puddles at Bramhall park we are back home, warming up and looking ahead to next week’s meal plan.  With pancake day next week I wanted to share some of my favourite alternative pancake recipes with you!

These are great for using up leftovers and they freeze amazingly well.  I love these and they are always a hit with Harry!

Banana and peanut butter pancakes

These have to be the quickest, easiest pancakes to make ever!  They only have 3 ingredients and are bound to be a hit every time!

Traditional pancakes

These are the type of pancakes we will be enjoying on Tuesday.  I’m not the best at weighing and measuring things out accurately so I follow this recipe when making my pancakes.  It doesn’t matter what size cup you use, an ordinary mug is fine as long as you use the same cup to measure the milk and flour.

  • 1 cup of plain flour
  • 1 cup of whole milk
  • 1 egg
  • Mix the ingredients well.
  • Add a ladle of the mixture to a hot frying pan with a little oil in it.  spread it thinly so it covers the bottom of the pan.
  • Once cooked on one side flip or toss and cook until golden on both sides.
  • Serve with whatever you like, cheese and ham, lemon and sugar, nutella, golden syrup, fruit and honey (over 1yr only)!  It’s only one day a year so we go all out and throw the rules of healthy eating out the window!

  • Tuna pasta bake
  • Pancakes!!

Wednesday

  • Sandwiches and salad
  • Spanish omlette

Thursday

Friday

  • Salad box, rainbow couscous, falafel and pitta bread
  • Pesto crusted salmon with broccoli and new potatoes

Saturday

  • Homemade hash browns and baked beans
  • Roast chicken dinner

Sunday

Flexi day
