Festive Chickpea Cookies

These healthy, festive chickpea cookies are full of flavour and make the perfect Christmas treat!  They’re really easy to make and are refined sugar and gluten free.  I’m going to make some of these for Harry’s Christmas party this weekend and I think we’ll make some to leave out for Father Christmas on Christmas Eve too.  Obviously, if you don’t celebrate Christmas these can be made without the festive shapes or writing but as Christmas is getting nearer I couldn’t resist putting a little twist on an old favourite recipe!

Ingredients

  • 400g can of chickpeas
  • 4 tbsp porridge oats
  • 4 tbsp smooth peanut butter
  • 4tbsp honey (NO HONEY FOR CHILDREN UNDER 1YR, SUBSTITUTE WITH MAPLE SYRUP OR AGAVE)
  • 1/2 tsp baking powder
  • 1/2 tsp ground nutmeg
  • 1/2 tsp cinnamon
  • 1/2 tsp all spice

Method

  • Put the oats in a food processor and blitz until they are a flour like consistency.
  • Drain and rinse the chickpeas.  Pat them dry and add to the food processor.
  • Add the other ingredients to the food processor and mix until it forms a smooth dough.  This may take a few minutes depending on how good your food processor is.
  • Roll the dough into a ball and chill in the fridge for 30 minutes.
  • Form the biscuits in whatever shape you like!  You could roll it out and use festive cookie cutters, roll it into balls and use a festive stamp like I have here or just make plain circles.. the choice is yours!  As long as they are approx. 1/2 cm thick then let your imagination go wild!
  • Place the biscuits on a baking tray and bake in a preheated over at 180°c for 12 minutes, until golden.
  • Leave to cool then serve and enjoy!

Harry really enjoyed this festive take on chickpea cookies and I hope his little friends like them this weekend too!

  1. Any idea if I can freeze the mixture before or after baking to avoid having to eat them all in 3 days?! 🙂
