Carrot cake bites

I’m really enjoying making these ‘ball’ snacks at the moment.  They’re a great way to get your little one to eat lots of healthy goodness while disguising it as a naughty treat!  It’s the week before pay day and after splurging on decorating and baby things we’re on basic rations for the next few days.  After the success of the other ball snacks I’ve made for Harry I decided to rummage through the cupboards and see what ingredients we had in to make some more.  I decided to mix it up a bit and make some carrot cake bites and am so happy with how they’ve turned out.  Harry loved them and so do I!

These are soft and naturally sweet with no refined sugars so are perfect for babies and toddlers.  I’d recommend making them the same size as the palm of babies hand to make them easier to pick up and eat.  I left mine quite course textured but you could mix them for longer if you want a smoother texture for younger children.

Ingredients

As with all my ‘ball’ recipes I use the term ‘cup’ loosely.  As long as you use these proportions you can use any sized cup to measure with to make as many or as few as you want.  The spices can be added gradually and adjusted to taste.

  • 1 cup grated carrot
  • 1/2 cup grated apple
  • 1 cup porridge oats
  • 1/2 cup pitted dates
  • 1/2 cup dried apricots
  • 1/2 cup ground almonds
  • 1/2 tsp cinnamon
  • 1/2 tsp all spice
  • 1/2 tsp nutmeg

Method

  • Put all of the ingredients in a food processor and blitz until well combined.
  • Roll the mixture into balls.
  • Once made they will keep in the fridge for a few days.  (If they don’t get eaten before then!)

  1. I found these a bit sticky (no doubt due to the proportions I used not your instructions!) but found that if I baked them at 180 for about 10 mins they hardened up a little and became a bit more cake-y – thank you for all the lovely ideas
