Broccoli fritters

This recipe was created when I needed a quick, easy lunch for my son and we didn’t have much in the cupboards. It was the day before we were going food shopping and I had a few bits left to use up. These healthy fritters went down really well with Harry and freeze well too! Win win!

Broccoli fritters

Ingredients:

The heads of 1 broccoli

1tbsp cream cheese

1 large egg

1/2 cup of flour

A twist of black pepper

Oil for cooking (we use fry light)

 

Method:

  • Put the broccoli into a food processor and blitz until it is a cous cous consistency.
  • In a bowl, mix all of the ingredients together.
  • shape the mixture into burger shapes and fry in the oil or fry light until golden on each side.
  • Serve with the accompaniment of your choice, potato wedges, mashed potato, savoury rice, cous cous or sweet potato chips are all favourites here.
