When Harry met Santa
Here is a little glimpse of when Harry met Santa. It really put me in the Christmas spirit and, although I was caught up in the excitement and didn’t take many pictures, I’m glad I remembered to capture what I did!
Brie and cranberry tart recipe
Ingredients
- 150g cranberries
- 2 tbsp caster sugar
- 2 tbsp water
- Shop bought filo pastry (I used half a pack of Sainsbury’s own brand)
- Brie (approx 1 inch cube per tart)
- Cooking spray
Method
- Put the cranberries, sugar and water in a pan and cook on a low heat for approximately 15 minutes, until soft.
- Cut the sheets of pastry into squares, approximately 10cm x 10cm.
- Lay 4 of your pastry squares on top of each other, all at different angles to make a star shape. Spray each sheet of pastry with cooking spray on each side before adding to the layers.
- Spray some cooking spray into a muffin tray and then place the pastry layers into the sections of the muffin tray to make the pastry cases.
- Place a piece of brie into each pastry case and add a teaspoonful of the cranberry sauce that you made earlier on top. (The tarts in my pictures have a little bit less brie in then I’ve stated in this recipe. They were delicious but definitely needed a bit more, hence why I’ve increased it in the recipe!)
- Bake the tarts in a preheated oven at 180°c for 10/15 minutes, until the pastry is golden and crispy. I made some mince pie tarts at the same time with the leftover pastry.
- Leave the tarts to cool on a cooling rack.
- Enjoy!
Is it ok for babies to have brie?
I think it’s ok if it is cooked x
