Bolognese with hidden veggies!

Everyone loves a good bolognese! We have this for tea a good few times every month. It’s tasty, can be made easily in the slow cooker if you are out at work all day and freezes amazingly well. What more can you ask for?

  • 500g minced beef
  • 500g passata
  • 500g beef stock (we use low salt oxo cubes!)
  • 100g tomato purée
  • A generous handful of chopped spinach
  • A handful of grated or chopped carrot
  • A handful of grated or chopped courgette
  • A handful of grated or chopped mushrooms
  • 2 cloves of garlic, crushed
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Worcester sauce to taste (we like a good 2 tsps full)
  • Black pepper to taste
  • Cooking oil or fry light for cooking
  • (You can add chopped onions and tomatoes too, my husband hates them though so we make it without.)

  • Brown the meat in a pan with the garlic (and onions if you are using them).
  • Add the passata, stock, tomato purée and Worcester sauce.  Allow to cook for 2 minutes then turn down to a gentle simmer.
  • Add the vegetables and herbs. Mix well and leave to simmer for 20 minutes.
  • Serve with pasta, spaghetti or in a pita bread for something a bit different!   Harry likes his with a bit of cheese sprinkled in top!
