Banana oaty pancakes

These pancakes are the perfect start to the day!  They’re quick to make, healthy and guaranteed to keep little tummies full until lunch time.  (Or big tummies… I enjoy these as much as Harry does!)

Ingredients

To make 5 pancakes

  • 1 ripe banana
  • 1 egg
  • 5 heaped tbsp porridge oats
  • 1/4 tsp baking powder
  • 1/2 tsp cinnamon
  • Cooking spray or oil for cooking

 

Method

  • Blitz the oats in the food processor until they are a flour like consistency.

  • In a bowl, mash the banana.  Add the other ingredients and mix well.
  • Spray a small amount of cooking spray in a frying pan.  Add tablespoonfuls of the mixture to the pan and cook for approx. 1 minute on each side, like scotch pancakes.
  • Serve on their own or with berries, yoghurt, maple syrup… whatever you fancy!

  2. Im wondering is someone could help….what the consistency should be? Are they a bit mushy on the inside?
    Because it’s for a baby want to make sure I’m making properly.

  3. Thank you very much for your lovely recipes! I’ve only now discovered your blog and trying to start my 9.5 month old on finger foods and Blw. A question on overnight oats: it’s raw, isn’t that tough on baby’s system? Thanks again!

      I’m not a nutritionalist or any kind of food expert just a mummy sharing what recipes have been enjoyed by my son. The oats are soft enough for baby and sticky and thick enough to stay on a spoon easily while a child is learning to use one themselves.
