Banana and Peanut Butter Pancakes

Ingredients:

1 egg
1 ripe banana
1 tbsp peanut butter
Organic sunflower oil (for cooking)

 

Method:

  • Mash the banana with a fork until smooth.
  • Whisk one egg and add to the banana.
  • Add peanut butter (to taste) and mix well.
  • Put a small amount of sunflower oil in the pan, spoon a tablespoonful of the mixture into the pan and fry like scotch pancakes.
  • Enjoy!

We usually serve ours with mixed berries and yogurt for a tasty breakfast or snack.

    They are super easy to make and IF you have leftovers you can heat them with a little bit of butter and they taste amazing 🙂
